Proud as we are of our Irish larder, we could hardly claim to use the best ingredients if we got olive oil off the rack at Tesco’s now could we? No, we send for our olive oil twice a year.
100 km east of Rome lies the sleepy little municipality of San Donato Val di Comino. Imagine 35.8 km² of vineyards and orchards that supply a large part of Italy’s olive oil.
One of the founding families of this 2,167 people commune is the Tramontozzi family. Their olive gardens aren’t the biggest, but their Frantoio oils are the most in demand. Some local families can consume over 80 liters of their olive oil each year.
Luckily, our decade long history with them gets us their best Frantoio oils. It comes from the first pressing of the olives, cold pressed extracted at 75 degrees Fahrenheit, with no solvents or chemicals. No surprise a small bottle of olive oil should cost more than a nice dinner out. It’s what makes your nice dinner out…. nice!
All this work just for a better tasting pizza? Naturally. But the health benefits don’t hurt
Heart health– The oleic acid in olive oil can help LDL-HDL cholesterol balance. A 2009 study from the “Journal of Cardiovascular Pharmacology” showed this can lower high blood pressure and risk of cardiac diseases by 30%.
Anti-Cancer – a 2004 study from the European Journal of Cancer Prevention shows olive oil contains antioxidants that can act as anticancer agents.
Weight loss – Researchers from University Hospital Basel in Switzerland found healthy fats in olive oil can control excess insulin. This reduces blood sugar levels, and weight gain. A 2002 study published in the Women’s Health Journal found these healthy fats are also more filling and help reduce cravings and overeating.
Brain health – Olive oil improves focus and memory. It contains polyphenols, which help fight age-related cognitive decline. It also helps fight against ADDLs, proteins toxic to the brain and induce Alzheimer’s.
Mood disorders – A 2011 study by the University of Las Palmas in Spain found that olive oil has hormone-balancing effects that can prevent depression and anxiety.
Ani-aging – Olive oil contains a type of antioxidant called secoiridoids, which help anti-aging and reduce stress on skin cells.
Diabetes – By controlling excess insulin, the monounsaturated fats in olive oil can reduce the risk of type 2 diabetes. Even when you eat something high in sugar or carbs, adding extra virgin olive oil to the meal can help slow down the impact on your bloodstream.
Breast Cancer – A 1995 study in Italy showed that higher consumption of olive oil correlated with a lower risk of developing the disease.
Where do you put it?
We use our olive oil throughout the cooking process.
We think that making pizza should be more of a contact sport than a fussy cooking experience. So, we start by pouring the oil into the dough, not brushing it on. It gives extra color to the dough and the cheese, as well as that golden-brown crust and bit of chew of the cheese.
We finish off with a drizzle of fortified olive oil as soon as the pizza’s out of the oven. If you’ve ever marveled at the beautiful aroma of a hot pizza, it the smell of olive oil that’s been infused with certain Italian herbs.
